At the table with Happje: healthy recipes for your little one

Banana and beet fruit purée (from 6 months)

You’ll need:

  • 1 banana
  • 1 cooked beetroot

How to make it:

Step 1: Peel the banana and cut into thick slices.

Step 2: Cut the beetroot into cubes.

Step 3: Blend together into a smooth fruit purée.

Tip: this purée also works great as a fruity spread on toast.

One-pan veggie lasagna (from 6 months)

You’ll need:

  • 200 g carrot
  • 4 tomatoes
  • 150 g fresh lentils (or 200 g canned, no added salt)
  • 1 white onion
  • 500 g sieved tomatoes
  • 2 tbsp Italian herbs
  • 200 g mozzarella
    (skip if your baby has a cow’s milk allergy)
  • 12 lasagna sheets
  • 2 tbsp extra virgin olive oil

How to make it:

Step 1: Peel and chop the onion. Peel and dice the carrots.

Step 2: Heat the olive oil in a large pan. Sauté the onion, then add the carrot and cook for a few more minutes.

Step 3: Chop the tomatoes and add them to the pan, along with the lentils, herbs and sieved tomatoes. Stir well and bring to a gentle boil.

Step 4: Break the lasagna sheets into smaller pieces and add them one by one to the sauce. Make sure they’re fully covered to avoid sticking. Let everything cook for about 15 minutes, stirring regularly.

Step 5: Sprinkle with mozzarella and fresh basil if you like.

This lasagna serves around 4 adults or 2 adults and 3–4 children. It freezes well too.

 

Apple grape popsicles (from 8 months)

You’ll need:

  • 1 green apple
  • 1 green kiwi
  • 20 green grapes
  • 7 mint leaves

How to make it:

Step 1: Halve the apple, remove the core and chop into chunks. Wash the grapes, peel the kiwi and chop as well.

Step 2: Add everything to a blender or food processor, along with a splash of water (around 100 ml), and blend until smooth. A little texture is perfectly fine.

Step 3: Pour into popsicle molds. Leftover mix? It makes a great smoothie or yoghurt topping!
